Banana Fritters FTW

Last night was take away night, Chinese to be precise from our new favourite place, he had the Roast pork in chilli and garlic and I had crispy beef in fruity sauce. Unusually both of us ordered fritters, we don’t normally splash out on dessert, he had the pineapple and I had my favourite banana – drenched in syrup – it would have been amazing with ice cream too but there has to be a limit. As I ploughed my way through all the food it reminded me that I should be more aware of what I eat having chosen all fried foods. Unlike the previous time when we ordered delicious lettuce wraps as a starter which added a certain level of lightness to the meal.

Ordering fried foods seems to originate from the fact that I don’t fry things, I am somewhat accident prone in the kitchen and thus anything which involves hot oil is avoided to ensure that I don’t burn myself, also not a bad thing as it does give me the odd bout of indigestion and frying food is inherently unhealthy so there is also that. I will leave a recipe below for these delightful treats – you can obviously adapt the fruit if you don’t like bananas.

Banana Fritters with Syrup

Serving Size:
2 to 3 People
30 Minutes


  • 1/2 cup (150g) plain flour
  • 1 teaspoon baking powder
  • 5/8 cup (155ml) water, chilled (preferably sparkling)
  • vegetable oil, to deep-fry
  • 2/3 bananas
  • golden syrup & Vanilla Ice Cream (optional) to serve


  1. Sift 1 cup of flour and baking powder into a large bowl. Add chilled water, mixing, until a smooth batter forms. Stand for 10 mins.
  2. Meanwhile, add enough oil to a large saucepan or wok to reach a depth of 3cm. Heat on high to 180°C, or until a cube of bread turns golden in 30 secs.
  3. Peel bananas and halve length-ways. Dust in remaining flour, shaking off any excess.
  4. Dip in batter and deep-fry in batches for 3-4 mins, until golden. Remove with a slotted spoon and drain on paper towel.
  5. Serve immediately with warmed golden syrup and/or ice cream.

Its a bit of a shame that I didn’t get to have a go at this recipe with my Dad’s bananas that he grew in his conservatory (see above) but its probably for the best given that deep frying is a challenge for me. I urge you to be very careful with the hot oil – if for some crazy reason it catches fire please do not throw water on it throw a damp cloth or fire blanket over it – if it doesn’t go out call the fire brigade. Throwing water on the oil will only encourage the fire.
